Crockpot Recipe: Fat Loss Friendly Stuffed Peppers

Honest moment: I grew up in a very traditional southern cooking home, so stuffed peppers were frequently on our dinner table.  And I never ate them.  Something about the ooze of the grease and the weird texture that the pepper had taken on… As a kid, I was not interested. 

But as an adult, green peppers may be my all time favorite vegetable. 

And when I found this fat loss friendly, cleaned up recipe that was made in the CROCK POT, I was so totally in! 

They turned out fantastically! I went ahead and made four peppers and ate off them all week, and even had extra “filling” that I cooked as meatballs in the same crock pot (just in between the peppers). 

I couldn’t believe how tasty and easy they were.

{Crockpot Recipe} Fat Loss Friendly Stuffed Peppers

Ingredients:

  • 1-1.5 pounds ground turkey
  • 4 green bell peppers
  • 1 onion (diced finely)
  • 2 C baby carrots (shredded)
  • ½ head cauliflower (use your food processor to chop finely)
  • 6 oz can tomato paste
  • 2 tsp oregano

Directions: 

  1. Cut the tops off the peppers and scrape the seeds out
  2. Mix the vegetables together (onion, carrot, cauliflower)
  3. Mix ground turkey in with the vegetables
  4. Add oregano and tomato paste to meat mixture
  5. Scoop meat mixture into the peppers
  6. Place peppers in the crock pot and add any of the extra meat mixture beside the stuffed peppers (I did mine meatball shaped)
  7. Ad ½ cup water to crock pot
  8. Cook on low for 8 hours. Serve immediately.
