{Healthy Dinner Ideas} Bacon Wrapped Stuffed Chicken

Everything tastes better with bacon! 🙂

I eat a lot of chicken and try to dress is up when I can to avoid getting bored with it. (plain chicken = boooring!)

For today’s BeyondFit healthy dinner idea, I took a few different recipes that I have tried in the past and combined them to create this delicious, easy, and fat loss friendly, masterpiece 😉

Bacon Wrapped Stuffed Chicken  

Ingredients:

  • 4 thin boneless chicken breasts
  • Panko breadcrumbs
  • ½ cup low fat or fat free cottage cheese
  • ½ spinach (cooked in advance)
  • 6-8 sundried tomatoes chopped up
  • 2 eggs
  • 4 slices reduced sodium bacon

Directions:

First, Preheat oven to 425 degrees.  Then….

  1. Beat one of your eggs and dip your chicken in the bowl. Then lightly coat your chicken with panko bread crumbs for a little crunch. Lay chicken flat on a foil covered baking sheet and set aside.
  2. In a medium bowl mix together cottage cheese, sundried tomatoes, precooked spinach, and 1 egg.
  3. Place a scoop of this mixture in the center of each chicken breast rolling the chicken up.
  4. Wrap an uncooked slice of bacon around the chicken and secure in place with a toothpick.
  5. Bake your chicken for about 20-25 minutes or until chicken is fully cooked. If you like your bacon crispier set your oven to broil for a few minutes once it is done baking. Be careful to watch it closely as it broils quickly.
  6. Serve with your favorite fibrous veggies!
