How to Make Simple Baked Chicken

As a Fat Loss Coach, I’m all about trying new (quick & easy!) recipes. I like to find recipes that anyone can make – the single working woman, the newlywed wife, the busy mom. 🙂

My recipe qualifications:

  1. The easier the preparation, the better.
  2. The more common ingredients, the better.
  3. The tastier the result, now that’s the best.

 

So, I bring you a new recipe that I personally really enjoy. I was hoping for a crispy topping that would be reminiscent of a healthier version of fried chicken, but what I got totally caught my taste buds by surprise! Instead of being crispy, it was juicy & savory with a hit of tangy-ness. It was not at all what I was expecting. And yet, I really enjoyed it! It was a total deviation from all the other baked chicken recipes I’ve tried – in a good way.

This may not be a recipe I use every week (like I seem to do with the Quick Chili and Zucchini Lasagna and Baked Zucchini Chips), but this is definitely a keeper that I’ll use when I need to mix things up in the kitchen.

Simple Baked Chicken

Ingredients:

  • ½ C Parmesan Cheese
  • 1 C Greek Yogurt
  • 1 t garlic powder
  • 1.5 t seasoning salt (Old Bay also works well)
  • ½ t pepper
  • 6 Chicken Breasts

 

Directions:

  1. Combine all ingredients in a bowl and mix together.
  2. Place your chicken breasts in a shallow, pre-greased baking dish and cover evenly with the yogurt mixture (careful about going too thick – about ¼ inch is enough!)
  3. Bake uncovered at 375 degrees for 45 minutes (or until your chicken is done and the topping is golden brown)

 

You can also try baking this in a drip pan, so that your topping doesn’t get absorbed by the chicken drippings (which you can see in the video that mine did).
