It’s Saturday morning pancake day at our house!!
Here’s a quick & easy recipe for our favorite fat loss friendly blueberry protein pancakes.
- 1/2 C oats or oat bran
- 4 egg whites
- 1/2 t vanilla extract
- 1-2 T Stevia (to taste)
- 1/2 t cinnamon
- 1 t baking powder
- 1/4 C fresh blueberries
1. Generously coat a skillet with oil spray and preheat over medium heat.
2. In a small bowl whip together all of the ingredients (or save the blueberries for a special Saturday morning message).
3. Pour the mixture onto the skillet and cook for 2 to 3 minutes, or until golden brown, on each side.
Tip: For a more moist pancake, cover the skillet with a lid while the pancake is cooking. ENJOY!
