Recipe Banana Chocolate Chip Cake

I love some good old dessert defense! One of our Beyondfit sisters found a recipe that she wanted to try but didn’t have all of the ingredients. Instead of giving in a grabbing an unhealthy dessert she decided to work with what she had and came up with this amazing treat! And I am so glad she did because It.Is.Delicious!

Ingredients:

  • 2 tbsp coconut flour
  • 4 tbsp almond flour
  • 2 tsp vanilla extract
  • 3-4 tbps Stevia or Truvia
  • ¼ tsp baking powder
  • 2 eggs
  • 2 tbsp unsweetened almond or coconut milk
  • 1 very ripe banana
  • 2 tbsp dark chocolate chips
  • Coconut oil to coat baking dish or mugs

    Directions

    1. Mix all of the dry ingredients together in a large bowl.
    2. Then add in the wet ingredients and mix well.
    3. Pour the batter into a microwave safe dish or into 2 coffee mugs that have been coated with coconut oil.
    4. Microwave for 2-3 minutes(Cooking time will vary depending on your microwave and also what you are cooking it in)

    I start with 2 minutes and cook longer for 30 seconds at a time until it is fully cooked. This ensures that I do not overcook the cake. I like to top mine with1 tbsp of natural peanut butter for frosting. Serves 2
