{Recipe} Fat Loss Friendly Cupcakes

A few months ago we celebrated my sweet girl Lilo’s 12th birthday!

Some of her favorite 2-legged friends came over to celebrate and enjoyed chili, laughs, and of course birthday cake! Lilo got to enjoy her very own cake with peanut butter as frosting (I do not recommend eating this one.) For the humans I found a delicious AND fat loss friendly cupcake that got great reviews!

 

These are sure to be a hit at your next get together!

 

Fat Loss Friendly Cupcakes!

 

Ingredients:

  • 5 eggs
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup Sugar free maple syrup
  • ½ tsp Stevia
  • ½ tsp baking powder
  • 2 Tbsp Almond flour
  • 6 Tbsp Coconut flour
  • 6 Tbsp Coconut oil, melted

 

Directions:

Preheat oven to 400 degree F. Blend all ingredients together in a large bowl with a hand mixer until smooth. Fill cupcake liners about ¾ of the way up with batter. Bake for about 10 minutes or until toothpick comes out clean.

 

Chocolate Frosting!

 

Ingredients:

  • 1 Cup dark chocolate chips or sugar free chocolate chips
  • ½ cup Coconut oil
  • ½ tsp vanilla extract
  • ¼ tsp salt

 

Directions:

Place all ingredients in a microwave safe bowl. Heat ingredients in microwave in 30 second increments until completely melted. Be sure to mix between each heating. Place the frosting in the freezer for 10 minutes or until hardened. Remove from freezer and mix with a hand blender until mixture thickens. Top the completely cooled cupcakes with the chocolate and enjoy!
