No one is perfect and we all have off days for whatever reason.

Here is a little bit more about me, I’m a busy stay-at-home-mom of 4 girls. My girls are ages 6 and 1. Yes, you read that right…my husband and I have been blessed with TWO sets of twins! As a mom of girls, God has given me the challenge to raise these gifts with positive self esteem and image in a world where that is not always easy. Even at age 6, my girls make comments about wanting to be skinny or notice when someone is bigger. These messages are everywhere today, whether you want them to be or not!

We try to do a couple of things to help them understand why everyone is different, and how to live a healthy lifestyle. First, we always tell them that God makes us unique and special. Second, we try to enforce healthy eating and promote being active at our house. I always tell our girls that it is important to choose healthy snacks and meals and to be active. Why? Because we are STRONG! BeyondFit fits our household perfectly. My girls have seen me complete the workouts and use recipes off the portal. I’ve even seen them “lifting” weights a time or two. It makes my heart smile that they are learning to be healthy at such a young age.

At the beginning of last school year, I struggled with what to give my girls for breakfast. I had lots of ideas, some of them were great and some of them weren’t. My older girls were in Kindergarten – this meant half days for us. Sometimes they had a snack and sometimes they didn’t. When I picked them up at noon, they were STARVING. After a few days, I started re-evaluating what we were eating for breakfast. I started to add protein and good carbs. I needed to do something to keep their brains focused on learning and not hunger. Now that school is starting again, I’ve revamped my list and am sharing a few of our favorites.

PROTEIN SHAKES

The combinations are endless. Here are my older girls’ favorites:

PB and Banana—serves 2

Ingredients:

  • 1 scoop of protein powder
  • 1 C almond milk
  • 1T of powdered peanut butter (chocolate or regular)
  • ½ banana
  • Ice

 

Directions:

Add ingredients to blender and serve.

Apple Cinnamon—serves 2

Ingredients:

  • 1 scoop protein powder
  • 1 C almond milk
  • ½ t cinnamon
  • 1 small apple
  • Ice

 

Directions:

Add ingredients to blender and serve.

 

FRUIT PIZZA

Ingredients:

  • Low Carb Tortilla
  • Natural Peanut Butter
  • Sliced Apples

 

Directions:

Spread the Peanut Butter on your tortilla and top with sliced apples.

 

BREAKFAST BURRITOS

We moved from Texas 18 months ago. While we were in Texas, we learned about the ever famous Breakfast Burrito. This breakfast item was a staple there and quickly became a favorite at our house.

Ingredients:

  • Low carb tortillas
  • Eggs (we do an egg/egg white combination)
  • Veggies of your choice (I like to add spinach, green chiles, peppers, onions…whatever is in the fridge!)
  • Turkey Sausage (optional)

 

Directions:

Scramble the eggs, veggies and sausage in a pan. Once cooked, put egg mixture in tortilla and breakfast is served.

 

EGG & TURKEY BACON OR SAUSAGE “MUFFINS”

Directions:

  • Preheat oven to 350 degrees
  • Grease your muffin pan
  • Use a piece of turkey bacon to line each muffin tin
  • Crack an egg inside of it
  • Bake for about 50-60 Minutes
  • Remove from oven and serve.

 

These freeze well and can be reheated in the microwave for 30 seconds.

I would add a serving of fruit—preferably whatever berries are in season for some good carbs

*Variation: You could use turkey sausage instead of bacon and scramble your eggs. Even add some onions and peppers. Lots of fun ideas here!!

 

BEYONDFIT PROTEIN PANCAKES

I used to make whole wheat pancakes and have switched to this recipe. Our girls love them and they have kept them going until lunch.

Make these in big batches and freeze. Breakfast is simple and easy!
