{Recipe} Turkey Pumpkin Chili

Turkey Pumpkin Chili

The leaves are changing, the air is getting cooler, I pulled my boots out of the closet, and pumpkin is back!!!!

One of our Bikini Boot Campers shared this recipe that she had found online and I just have to pass it along to the rest of you because It. Is. Delicious! What I love even more about this recipe is that is goes in my crock pot! I tend to use mine a lot more in the cooler months and this was the perfect way to break it back in after taking the summer off.

Ingredients:

• 2lbs lean ground turkey
• ½ tsp olive oil
• 1 small onion
• 3 garlic cloves
• 1 tsp chili powder or more to taste
• 2 bay leaves
• 2 tsp cumin
• 1 tsp oregano
• 1 15oz can of white beans rinsed and drained
• 15oz can of pure pumpkin puree
• 4.5oz can of green chiles
• 2 cups lower sodium chicken broth
• Salt and pepper to taste

Directions:

Lightly spray a large pan with cooking spray and brown the turkey. Once fully cooked add the turkey to the crock pot. Next add the oil to the pan and sauté the chopped up onion and garlic adding cumin to the pan. Cook for 3-4 minutes and add them to the crock pot. Finally add the pumpkin puree, green chilis, broth, chili powder, oregano, and bay leaves to the crock pot. Cover and cook on high for 4 hours or low for 8 hours. Set it and forget it until dinner time!
