It’s a rainy morning here at the Pittman house today, just the kind of morning that gets me in the mood for baking things like these amazing gluten-free fruit & oatmeal bars.
It’s also been a super rainy summer here in Eastern NC, but I don’t mind. I *love* the rain! Perhaps because fall is looming around the corner, or maybe it’s the gloomy weather…whatever the case, I needed to bake-up some comfort food on this rainy September morning. Of course, keeping my fat loss goals in mind, I made sure that these gluten-free fruit & oatmeal bars leave out all the fat and sugar that comfort foods usually carry along with them!
Additionally, these gluten-free fruit & oatmeal bars are the perfect quick morning brekkie served with some plain or vanilla flavored Greek yogurt. They also make a great early afternoon snack. Heat them in the microwave to eat along with a mug of green tea????
