As a self proclaimed peanut butter-a-holic, I love anything and everything peanut butter. That’s why, in my mind, I don’t think we can go wrong with more guilt-free, protein packed, healthy peanut butter recipes. 

 

7 Healthy Peanut Butter Recipes You NEED!

1. Gluten Free Peanut Butter Protein Cookies

Ingredients:

• ½ C Truvia
• 
1 C natural peanut butter
• 1 scoop PEScience Peanut Butter Cookie Protein Powder
• 1 egg
• 1 t vanilla

Directions:

  1. Preheat the oven to 350 degrees
  2. Mix all your ingredients together. I highly recommend using a mixer – or you can just count the mixing as your upper body workout for the day!
  3. Use two spoons to make small tablespoon sized balls of the dough on the cookie sheet
  4. Bake for 12-14 minutes
  5. Let cool on cookie sheet for 2-3 minutes before removing
  6. Enjoy!

 

2. Peanut Butter Protein Cookie Dough

Ingredients:

• ½ C gluten-free oat flour
• 1 scoop PEScience Peanut Butter Cookie Protein Powder
• 2 T baking stevia or granulated sweetener of choice
• 2 T coconut oil
• 2 T water
• 2 T sugar-free or dark chocolate chocolate chips
• 1 t vanilla extract

Directions:

  1. In a bowl, stir together flour, protein and sugar.
  2. In a microwave safe bowl, melt butter.
  3. Pour melted coconut oil, vanilla and water into dry ingredients and stir using a fork until a dough forms.
  4. Fold in chocolate chips.
  5. Serve immediately or roll dough into 5 equally sized balls and freeze 2-4 hours before serving.
  6. Enjoy!

 

3. Single Serving Peanut Butter Chocolate Chip Cake

Ingredients:

• 2 T oat flour
• ½ 
scoop PEScience Peanut Butter Cookie Protein
• 1 T coconut sugar
• 1 T powdered peanut butter
• 1 T coconut oil, melted
• 2 T sugar-free maple syrup
• 1 T mini chocolate chips
• 1 egg yolk
 ¼ t baking powder
• ¼ t baking soda
• ½ t vanilla extract

Directions:

  1. Preheat oven to 350F and prepare a 1 C ramekin with non-stick spray.
  2. In a bowl, sift together all dry ingredients (oat flour, protein, powdered peanut butter, coconut sugar, baking powder and baking soda).
  3. In another bowl, stir together coconut oil, vanilla extract and syrup.
  4. Pour coconut oil mixture into the dry mixture and stir using a fork.
  5. Add the egg yolk and continue mixing until completely incorporated.
  6. Fold in chocolate chips.
  7. Pour dough into ramekin and bake for 12-14 minutes.
  8. Let cool and enjoy!

 

4. Peanut Butter Protein Puppy Chow

Ingredients:

• ¼ C peanut butter
• 
2 T dark chocolate chips
• 1 T coconut oil
• 1 T unsweetened cocoa powder
• 3 C whole wheat Chex (or cereal of choice)
• ½ C PEScience Peanut Butter Cookie Protein Powder

Directions:

  1. In a microwave safe bowl, melt the peanut butter, coconut oil and chocolate chips together in 15 second intervals until smooth.
  2. Stir in cocoa powder.
  3. Place your Chex in a large bowl and pour your melted peanut butter mix over it.
  4. Use a spatula or wooden spoon to stir until the Chex are completely coated in the peanut butter.
  5. Pour your protein powder into the bowl and continue to stir until the protein is completely incorporated and coats all the cereal.
  6. Enjoy!

 

5. Chocolate Peanut Butter Protein Squares

Ingredients:

• ½ C natural peanut butter
• 
1 ½ scoop PEScience Peanut Butter Cookie Protein Powder
• 3 
T sugar-free maple syrup (divided)
• 
3 T coconut flour
• 
3 T unsweetened almond milk
• 
½ C sugar-free or dark chocolate chips
• 2 T coconut oil

Directions:

  1. Line an 8×8 inch pan with parchment paper.
  2. In a large bowl, stir together peanut butter, protein powder, coconut flour, milk and 2 T sugar-free maple syrup using a fork until a dough forms.
  3. Press dough evenly into the bottom of the pan and set aside.
  4. In a double boiler or microwave safe bowl, gently melt chocolate chips and coconut oil together. Stir in 1 T sugar-free maple syrup until you have a frosting like consistency.
  5. Use a rubber spatula to evenly spread chocolate over the peanut butter layer. Sprinkle with chocolate chips if desired.
  6. Place in the freezer for 30 minutes to set. Cut into 16 squares and enjoy!
  7. Store in an airtight container in the refrigerator.

 

6. Chocolate Peanut Butter Protein Pop

Ingredients:

• 1 box sugar free, fat free instant pudding mix
• 
1¼ C cold unsweetened almond milk
• 1 scoop PEScience Peanut Butter Cookie Protein Powder
• 1 T unsweetened cocoa powder
• 4 T natural peanut butter

Directions:

  1. Whisk together the pudding mix and cold almond milk for two minutes until a pudding forms.
  2. Stir in the protein powder and cocoa powder until completely incorporated.
  3. Fill 4 popsicle molds halfway up with the pudding.
  4. Put 1 T of peanut butter over the pudding and then top with another layer of pudding until the mold is full.
  5. Insert popsicle sticks and place in the freezer for at least 4 hours before serving.
  6. ENJOY!

 

7. Healthy Apple Dessert Nachos

Ingredients:

• 1-2 apples
• 
½ C natural peanut butter
• 1 T honey
• ½ scoop PEScience Peanut Butter Cookie Protein Powder
• chocolate chips
• Toppings of your choice – great with shredded coconut, nuts, etc

Directions:

  1. Thinly slices your apples and lay on top of a platter.
  2. Melt peanut butter until it reaches a drizzle type consistency, then slowly mix together peanut butter, honey and protein powder until smooth.
  3. Drizzle peanut butter mixture on top of apples.
  4. Sprinkle toppings of your choice like shredded coconut, peanut butter chips, chocolate chips or more!
  5. Serve immediately and enjoy!
