{Recipe} Sweet Potato Cookies

These sweet potato cookies are the perfect weekend treat!

Ingredients:
 
  • 2 C pureed sweet potatoes (boil then blend by hand or food processor until smooth)
  • 1/2 C oats
  • 1/2 C oat flour
  • 2 eggs {or 4 egg whites}
  • 1 t cinnamon
  • 1 t baking powder
  • 1 t vanilla
  • 3/4 C dark chocolate chips
  • 6 T of all natural peanut butter or favorite nut butter
*for additional sweetness add 1 TB of honey or natural maple syrup
 
Directions:
 
  1. Preheat oven to 350 degrees.
  2. Spray a cookie sheet with nonstick cooking spray.
  3. Combine all ingredients in a bowl, make sure everything is mixed well, then add your chocolate chips.
  4. Drop by tablespoon onto baking sheet.
  5. Bake for about 20-25 minutes or until cooked thoroughly.
 
Makes about 2 dozen cookies!
