{Recipe} Sweet Potato Cookies

These sweet potato cookies are the perfect weekend treat!
Ingredients:
- 2 C pureed sweet potatoes (boil then blend by hand or food processor until smooth)
- 1/2 C oats
- 1/2 C oat flour
- 2 eggs {or 4 egg whites}
- 1 t cinnamon
- 1 t baking powder
- 1 t vanilla
- 3/4 C dark chocolate chips
- 6 T of all natural peanut butter or favorite nut butter
*for additional sweetness add 1 TB of honey or natural maple syrup
Directions:
- Preheat oven to 350 degrees.
- Spray a cookie sheet with nonstick cooking spray.
- Combine all ingredients in a bowl, make sure everything is mixed well, then add your chocolate chips.
- Drop by tablespoon onto baking sheet.
- Bake for about 20-25 minutes or until cooked thoroughly.
Makes about 2 dozen cookies!
