{Recipe} Sweet Potato Protein Muffins

Did you know? Sweet potatoes are a good source of magnesium, which is the relaxation and anti-stress mineral. (What mom doesn’t need more of THAT?)
Magnesium is necessary for healthy artery, blood, bone, heart, muscle, and nerve function, yet experts estimate that approximately 80 percent of the population in North America may be deficient in this important mineral.
If you’re looking for a new way to up your sweet potato intake (let’s be honest, you can only handle a plain ol’ sweet potato for so long) here’s a yummy protein muffin recipe for you to try….
BeyondFit’s FitMiss Sweet Potato Protein Muffins!
Muffin Ingredients:
• 12 oz of cooked sweet potato (or canned pumpkin)
• 1/3 C unsweetened almond milk
• 2 scoops of FitMiss Vanilla Chai protein powder
• 4 egg whites
• 2 eggs
• 3/4 C oat flour + oats for toasting (optional)
• 1 t baking powder
Frosting Ingredients:
- 1 T FitMiss Vanilla Chai protein powder
- 1/2 T cinnamon
- 1 1/2 T unsweetened almond milk
Directions:
- Preheat oven to 350 degrees.
- Blend all your muffin ingredients together until smooth.
- Line a muffin pan with 12 baking cups and evenly pour in your batter.
- Bake muffins for 20-22 minutes or until a toothpick comes out clean.
- While the muffins are baking, stir together frosting ingredients.
- Allow muffins to cool slightly about 5 minutes.
- Top with frosting and/or toasted oats on each muffin.
