Let’s face it, most of us are always on the go whether it’s chauffeuring kids around or going from one job to the next.
This is why I love love love my crock pot!
Most crock pot recipes require very little prep (usually just throwing the ingredients in and turning it on.) By evening your house smells fabulous and dinner is ready to be served.
It’s as convenient as take-out but a lot cheaper and most likely much more fat loss friendly, 😉
Here is my most recent slow cooker success: a great healthy lunch idea or a healthy dinner on the go!
Slow Cooker Cilantro Lime Chicken
- 1 16oz jar of salsa
- 1 taco seasoning packet
- 1 lime, juiced
- 3 TBSP chopped cilantro
- 3 lbs skinless, boneless chicken breasts
Place all of the ingredients to your slow cooker. Mix everything together making sure that your chicken is coated well. Cover the cooker and cook on High for 4 hours or 6-8 hours on Low. Shred chicken with a fork before serving.
