Favorite Healthy Recipe: Energizing Peanut Butter Protein Balls

Makes 48 cookies

  • 1 Cup Peanut Butter, Almond Butter, or Seed Butter
  • 2/3 cup raw honey or agave
  • 2 tsp. vanilla
  • 1/2 cup flax meal
  • 2 cups oats (use Gluten Free oats if needed)
  • 1 cup Vanilla Protein Powder
  • 48 large Dark Chocolate chips
    • OTHER OPTIONS:
    • ¼ mini chocolate chips
    • Raisin

Mix all ingredients into a large mixing bowl. Roll into 1 inch balls. Press down on a plate or cookie sheet until slightly flattened. Press a large, dark chocolate chip into the middle of each cookie. Refrigerate or keep at room temperature.

**If you are adding mini chocolate chips vs. large chips then mix chips in the mix before rolling.

This takes 5 minutes or less to mix; 5-10 minutes to roll into balls.

These are great snack for on the go or a late afternoon pick me up snack. I also serve these at parties for a dessert.

Favorite BeyondFit Exercise: I am a big fan of all the hybrid exercises. I love how they work multiple muscles in less time. Currently my favorite exercises are Squat + Press and Chest Press + Leg Lifts.

Least Favorite BeyondFit Exercise: Burpees and Push-Ups, I still do them because I know the great benefits they proved.

Random Fact: I don’t like snakes, they totally freak me out. My kids think it’s so funny. They enjoy scaring me by placing random plastic or rubber snakes around the house.

Kristen Durnan

Kristen

Kristen Durnan is a NASM Certified Personal Trainer, Women’s Fitness Specialist, and Fitness Nutrition Specialist. She has been a trainer for over four years. She started out at a small gym in New Bern, NC where she helped numerous people reach their goals. Some of her most noteworthy clients were a former trainer who had crept his way up to over 400lbs (he lost 100 of those in the year they worked together!), and her first client who signed up for training to gain some extra structure (she ended up losing 28lbs and over 13% body fat in their 14 months together!). She also began a boot camp in her first gym, where participants saw TONS of results. By the time she left this gym a year and a half later, she was working with over 32 people and knew she had to find a way to help MORE people.

Kristen had her first child in April 2015, a son who she incorporates into her workouts. She is now pregnant with baby number two. Kristen helps other women with babies feel stronger in their bodies by running an online local program. She is also author of ebook, Lean Body: The Four Month Workout Plan To Your Healthiest Body, as well as PR Half Marathon Training Plan. She also does one-on-one in-online training, and will be starting up her boot camps again in August after she has recovered from having her baby!

Kristen’s favorite healthy recipe: Breakfast Casserole!

-16 ounces Greek yogurt

-12 ounces cheese, shredded

-8-10 pieces bacon, cooked OR 1lb Ground sausage

-Spinach, chopped

-Broccoli, cooked (3minutes steamed) and chopped

-1 TBSP Rosemary

-Pepper

Instructions:

1. Preheat oven to 350 F.

2. Put eggs and Greek yogurt in blender with Oregano and pepper. Blend well.

3. Put half the cheese into a 9X13 baking pan, followed by the bacon, the broccoli and then the rest of the cheese.

4. Pour the egg mixture over the whole thing.

5. Bake 45-55 minutes, until top is golden brown and toothpick inserted into the center comes out clean.

Favorite Exercise: Kristen loves hybrid exercises where she can get the biggest bang for her buck! Currently her favorite exercises are burpee curl & press, deadlift squat and curl, & of course, sprints! Not only does she love the fat burning function of these three exercises, but as a runner these help strengthen her legs to prevent injuries, as well as help her become a faster runner! Her least favorite exercise is mountain climbers.

A little random tidbit about Kristen: I LOVE penguins! I mean obsessed. My son’s room is an Antarctic theme, I have several (at least four pairs) of penguin pajamas, and I keep penguin decorations in my house year round, including salt and pepper shakers. I have already looked into cruises to Antarctica and am not quite sure that three weeks is enough time for me there.
