Chicken Bruschetta
So the other weekend, my house-mate and I were brainstorming what we wanted to cook for dinner. We were hungry. Our tomato plant had just produced a handful of small tomatoes, so we wanted to use those. I wanted chicken. We decided on Italian. But we just couldn’t seem to find a recipe we liked. So we decided to make it up as we went! And that, my friends, is how we came to create what I lovingly call “Chicken Bruschetta.”
Ingredients:
- 3 Chicken Breasts
- 1 Large slicing tomato, diced
- WildTree Tuscan seasoning
- Olive Oil
- Freshly grated Parmesan Cheese
Directions:
- Preheat the oven to 350
- In a glass baking dish, pour about 2 T of olive oil and rotate to coat bottom of pan
- Season both sides of chicken breasts with Tuscan seasoning to taste
- Place chicken breasts in glass baking dish, and top with tomatoes
- You can also add a little more Tuscan seasoning on top of the tomatoes
- Drizzle a little olive oil on top of the chicken/tomatoes
- Sprinkle parmesan cheese on top of tomatoes to taste
- Cover with aluminum foil and bake until done (30-50 minutes depending on the chicken thickness)
And that’s it!! Serve with your favorite green vegetables or a heaping salad and you will *not* be disappointed! Sometimes it pays off to experiment in the kitchen – so don’t be afraid! Go get your hands dirty!
*Note: I did try regular Italian seasoning instead of the Tuscan seasoning. I personally prefer the Tuscan seasoning, but if you don’t have any, try the Italian seasoning.
