Healthy Cheesy Cauliflower Soup

One of my favorite sides growing up was this super creamy potato soup that my Dad made during the winter.

It is such a comfort food. 

But with all the starchy potatoes and fat and butter, it is in no way fat loss friendly. So when I found a recipe for a cheesy cauliflower soup, I was intrigued.

Could this soup be the missing replacement for that comfort food?

So I decided to give it a try and I have to say…it was DELICIOUS! 

The recipe is below, and I would really recommend this one. It is super easy to make, and I love that it put my slow cooker which means I could prep, hit “on”, and walk away. It doesn’t get much easier than this!

The recipe recommends blending to your desired consistency. I over blended mine and it turned out quite thin so I think if you used a potato masher to “mash” your veggies, that would be a good option.  

If this is still too thin for your liking, for the next batch, add in ½ cup almond flour when you pour in the half and half – that will really help to thicken it up.

Healthy Cheesy Cauliflower Soup

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1 C diced carrots
  • 1 onion, diced
  • 3 celery stalks, diced
  • 2 garlic cloves, diced
  • 4 C low sodium chicken or vegetable broth
  • 12 oz fat free half and half
  • Salt and pepper
  • 1.5 C shredded reduced fat cheddar cheese

Directions:

  1. Add the cauliflower, carrots, onion, celery, garlic, and broth to the crockpot. Cook on low heat for 4 hours or until veggies are soft. 
  2. Add half and half to the slow cooker and turn it up to high for 1 hour to thicken up the soup.
  3. Season with salt and pepper to taste.
  4. Blend in batches until desired smoothness.
  5. Stir in the cheese until it melts completely. Serve immediately. 🙂
