{Healthy Dessert} Chocolate Coconut Clusters

Earlier this year we had some historical snowfalls take place in North Carolina.  With no work for a few days in a row, it didn’t take me long to start to go stir crazy (along with that comes wanting to eat everything in my house for no reason other than I am bored).

I will say that I am thankful that my fridge and pantry are filled with fat loss friendly foods and none of the other junk- otherwise, that boredom eating could’ve gone a lot worse.

Instead of going crazy with junk, I decided to try a recipe that was shared with me by one of our very own Bikini Boot Campers last night and must say it was delicious and helped me not to overindulge….. because even overindulging on good stuff isn’t always best.

Chocolate Coconut Clusters

Chocolate Coconut Clusters

Ingredients:

  • 5 oz unsweetened coconut flaked or shredded
  • 2/3 Cup melted coconut oil + 1 Tbsp
  • ½ Cup almond butter
  • 1 tsp vanilla
  • 1 Cup dark chocolate chips

Directions:

  1. In a medium bowl mix together coconut, 2/3 cup coconut oil, vanilla, and almond butter.
  2. Using your hands, form 1-inch balls and put on a plate.
  3. Put the plate in the freezer until the clusters harden completely.
  4. Once hardened, melt the chocolate chips and 1 Tbsp coconut oil in a double boiler until smooth.
  5. Dip the coconut clusters into the chocolate and put back onto the plate or in a small baking dish.
  6. Put them in the refrigerator and eat once they are cold.

Side Notes:

I used a mini muffin pan and scooped the balls into that.  Also, I was impatient that evening and wanting them quicker so I just mixed the chocolate chips into my batter and omitted the 1 Tbsp of oil. 😉
