{Healthy Dessert Recipes} Protein Truffles

With just two days until Christmas, the holiday “treats” level has hit an all new high.  How are you holding up?

If you’re a dessert lover like me, the endless holiday treats- cakes, cookies, chocolates, etc can be a big problem when it comes to maintaing a reasonable physique this time of year.  Here’s the truth…

Simply cutting out treats all together is just not practical.

So amidst all of this chocolate and Christmas candy, we need something that will satisfy our sweet tooth (or teeth) WITHOUT giving us a belly that shakes like a bowl full of jelly.  (Definitely doesn’t fit in with our #absbychristmas goal, this year).

I’m all about living a healthy, happy and BALANCED life.

There is nothing wrong with treating yourself and your family through the holidays, but at this time of year, it can be tempting to indulge much more often than we should.  When sweet treats become less of a treat and more of an expectation or habit… THAT is when we’ve got a problem!  (Goodbye skinny jeans, hello elastic waistband).

If your sweet tooth is getting the best of you, have no fear!

Here’s a quick (seriously, this only took me 15 minutes!) easy, and DELICIOUS healthy dessert recipe that will still satisfy your sweet tooth without packing on the pounds!

{Healthy Dessert Recipes}  Chocolate & Peanut-Butter Protein Truffles:

Ingredients:

Directions:

  1. Microwave chocolate chip cookie dough quest bar for 10 seconds and roll out onto a cutting board that is covered in a thin layer of coconut oil. (This smelled so good even GILBERT was begging for some!)questbargilby
  2. Cut the quest bar into four (4) separate sections and place 1/4 tsp of homemade peanut-butter into the middle of each section.
  3. Roll the quest bars sections into balls around the peanut butter. (Quick tip: coat your hands with coconut oil so it sticks less).
  4. Melt dark chocolate in a small bowl and roll the balls into the chocolate until lightly coated.
  5. Pour 1 TBS cocoa powder, coconut, or chopped nuts into small bowls and drop the chocolate balls into them, covering the whole thing.

Note:  This recipe would be delicious on it’s own and could be made without being dipped or drizzled with chocolate, depending on your goals.

A few ideas for coating your easy protein truffles include:

  • Ground Flax
  • Shredded Coconut
  • Plain Cocoa Powder
  • Crushed Nuts (Pecans, Peanuts, Walnuts, Almonds, etc)

Added Protein Option: Consider adding 1 scoop of Protein Powder to your peanut-butter for a creamier, more “Reese’s Cup” type filling.

Additional Protein Truffle Flavor Ideas: You know I’m a major lover of all things chocolate + peanut butter, so that’s why I went with the recipe above.  But the cool thing about this healthy dessert recipe is that you could truly turn it into just about ANY flavor of truffle that you desire!

  • White Chocolate Raspberry Truffles: White chocolate raspberry quest bar + sugar free raspberry jam
  • Vanilla Almond Truffles: Vanilla almond quest bar + almond butter
  • Peanut-butter Truffles: Peanut0-butter quest bar + natural peanut-butter
  • Mint Chocolate Truffles: Chocolate brownie quest bar + dark chocolate mixed with peppermint extract
  • Chocolate Covered Coconut Truffles: Coconut cashew quest bars + chocolate filling
  • Cinnamon Bun Truffles: Cinnamon roll quest bar + cinnamon bun protein powder mixed with almond butter
  • Coconut Cream Truffles: Coconut cashew quest bars + unsweetened coconut
