{Healthy Dinner Ideas} Shepherd’s Pie Recipe
When it comes to comfort foods they tend not to be very fat loss friendly…
For example, mac and cheese, shepherd’s pie, grilled cheese, and pizza are some of my favorites but as you are learning carbs and fats mixed together are not conducive to fat burning.

Growing up my parent’s version of shepherd’s pie was something that I often requested when asked what I wanted for dinner.
My parents almost always said yes too because it was so easy – mashed potatoes, creamed corn, ground beef, and cheese. Now this wouldn’t fly for me anymore but I found a way to bring back that childhood favorite while staying on track with my goals. Try it out and let me know what you think!
{Healthy Dinner Ideas} Shepherd’s Pie Recipe
Ingredients:
- One head of cauliflower
- 1 lb of lean ground beef, turkey, or chicken
- 1 bag of frozen mixed vegetables ( I used a mixture of green beans, peas, corn, and carrots)
- Garlic (to taste)
- 1 TBSP plain Greek Yogurt
- Shredded cheese (optional- to taste)
- Salt and pepper (to taste)
- A splash of unsweetened almond milk
Directions:
- First Layer – Ground beef- Spray a small pan with cooking spray and cooked ground beef completely over medium heat. You can add your favorite spices to increase flavor. Drain any excess grease from the pan and place cooked beef in a casserole dish.
- Second Layer – Veggies- Thaw out half of the bag of mixed veggies and place on top of the ground beef
- Third Layer – Mashed cauliflower- First prepare the cauliflower by cutting into small pieces and boiling in 1 cup of water until tender (about 12 min). Drain the water and add the yogurt, milk, chopped garlic, salt, pepper, and almond milk. Place all ingredients in your food processor and blend until smooth. Place the cauliflower in the casserole dish as your final layer. You can top with your favorite shredded cheese.
- Bake uncovered at 400 degrees for 20 minutes.
Note: One of my favorite things about this dish is that it heats up well the next day and also tastes good cold.
Quick Tip: Many of us have a sensitivity to dairy, myself included. In this case I would try to eliminate or at least limit the cheese and maybe try added some more of your favorite sodium free spices for flavor. 🙂
