I know what you’re thinking.

You think I’m crazy for starting out 2016 with a dessert recipe. Goodbye weight loss goals!

Well, I think you’re crazy for thinking I’m crazy. Because there is absolutely nothing wrong with dessert (I ate chocolate for breakfast dessert the other day). Especially THIS dessert. Wanna know why? It is made with only four ingredients, and not one of them is processed like a generic Jell-O chocolate pudding dessert you might find on grocery shelves.

 

Boxed Jell-O Chocolate Pudding vs. Homemade Mint Chocolate Avocado Pudding

Let’s just review the ingredients list of an ordinary box of Jell-O Chocolate Pudding:

SUGAR, MODIFIED CORNSTARCH, COCOA PROCESSED WITH ALKALI, DISODIUM PHOSPHATE (FOR THICKENING), CONTAINS LESS THAN 2% OF NATURAL AND ARTIFICIAL FLAVOR, SALT, TETRASODIUM PYROPHOSPHATE (FOR THICKENING), MONO- AND DIGLYCERIDES (PREVENT FOAMING), RED 40, YELLOW 5, BLUE 1, ARTIFICIAL COLOR, BHA (PRESERVATIVE). *AMOUNT IN DRY MIX.

Why they need to add food coloring to make chocolate pudding brown is beyond me. Shouldn’t your cocoa do that? I know after you actually make this pudding, the main ingredient is probably milk, at least I think that’s what you make this with, and not water. But the next main ingredient would be sugar. There are 72 grams of sugar in the entire box!

There are only 16 g of sugar in the entire mint chocolate avocado pudding recipe. Both the Jell-O version and my version have four servings. Which one would you rather eat?

I realize that an avocado pudding might sound a bit unorthodox. And that avocados have seem to taken over the healthy recipe world! But I’ll tell you, it’s for good reason because this pudding is truly delightful! I will also be completely honest. It does not taste exactly like the Jell-O version. How could it? First, I put mint in it. Second, the ingredients are completely different. While this mint chocolate avocado pudding doesn’t taste like a sugary processed dessert, it is rich and creamy with just the right amount of minty flavor! Finally, avocados are also filled with healthy fats, which is something you need in your diet.
