{Berry Good Breakfast} Patriotic Protein Pancakes

Everyone loves protein pancakes, these berry good patriotic pancakes are a fun twist on a traditional favorite! This recipe for protein pancakes already has blueberries in the batter, but if you want to get really festive, then split the batter into two and add puréed red raspberries to one bowl and puréed blueberries to the other. Alternate red and blue pancakes on the plate, and top with plain greek yogurt & a little bit of stevia.

It can’t get much easier (or delicious) than this! Simply cut fresh strawberries (we went to pick our own), or use raspberries (or both!) and your favorite white cheese.
 Arrange as shown above! If you’re not a cheese lover, opt for a simple fat loss friendly fruit dip: Plain Greek Yogurt sweetened with stevia and a dash of vanilla.

{Everyones Favorite Entree} Philly Cheese Steak Stuffed Peppers

I don’t know about anyone else, but I love Philly cheese steaks. Unfortunately they are not very fat loss friendly. That’s why I absolutely love this recipe. The great thing about this is you can make it your own, adding other veggies that you may like.

Ingredients:
8oz (about ½ lb) thinly sliced roast beef
8 slices provolone cheese
2 large green bell peppers
1 medium sweet onion, sliced
6 oz baby bella mushrooms, sliced
2 T olive oil
1 T garlic, minced
Salt and pepper, to taste

Directions:

  1. Slice peppers in half lengthwise, remove ribs and seeds.
  2. In a large sauté pan over low-medium heat, add olive oil, garlic, mushrooms, onions, and a little salt and pepper.
  3. Sauté until onions and mushrooms are caramelized.
  4. Preheat oven to 400 degrees.
  5. Slice roast beef into thin strips and add to the onion/mushroom mixture. Allow to cook 5-10 minutes.
  6. Line the inside of each pepper with a slice of provolone cheese. Fill each pepper with the meat mixture until they are nearly overflowing.
  7. Top each pepper with another slice of provolone cheese.
  8. Bake for 15-20 minutes until the cheese on top is golden brown.

Just because you’re trying to eat healthy doesn’t mean you can’t have dessert. Everyone loves a good cookie at the end of a BBQ or potluck picnic, and this is an easy cookie you can feel good about giving to your children.

If you’re feeling more patriotic, go for some Red, White & Blue Mini Cheesecake Bites! These mini cheesecakes are super cute and great for portion control. Simply follow the recipe, opting to use miniature muffin tins lined with miniature paper liners instead of one large spring form pan. Top with your choice of fruit (great with strawberries, blueberries or raspberries) and bake until the center of each mini cheesecake is set and the tops are lightly browned.
