Memorial Day Weekend traditionally marks the start of summer – the perfect time to fire up your grill and enjoy some fun in the sun over a delicious, healthy meal.

Summer is filled with fun picnics, potlucks and outdoor parties.

Instead of turning to the same dishes for every event, try something new with these healthy recipes for summer BBQ and picnic favorites.

From patriotic protein pancakes to fat loss friendly deviled eggs and plenty of burgers, fries, and everything in between.

Enjoy these picnic-perfect recipes for a healthier summer cookout.  

Here are some of my best ideas for having a fun, stress-free & delicious summer party without the guilt.

{Berry Good Breakfast} Patriotic Protein Pancakes are a fun twist on a traditional favorite. Everyone loves protein pancakes! This recipe for protein pancakes already has blueberries in the batter, but if you want to get really festive, split the batter in half and add puréed red raspberries to one bowl and puréed blueberries to the other. Alternate red and blue pancakes on the plate, and top with plain Greek yogurt & a little bit of stevia.

{Amazing Appetizer} Red, White & Blueberries & Cheese Tray
. It can’t get much easier (or delicious) than this! Simply cut fresh strawberries (we went to pick our own), or use raspberries (or both!) and your favorite white cheese.
 Then arrange the cheese with fresh blueberries, strawberries and raspberries, as shown above! If you’re not a cheese lover, opt for a simple fat loss friendly fruit dip: Plain Greek Yogurt sweetened with stevia and a dash of vanilla.

{Skinny Sides}: Parmesan Picnic Chips &  Deviled Eggs

{Delicious Desserts}: Eating healthy doesn’t mean you can’t have dessert. Here are two of my picks for the best BBQ friendly summer desserts from the BeyondFit Test Kitchen. First, how about some quick & easy Healthier Chocolate Chip Cookies. Everyone loves a good cookie at the end of a BBQ or potluck picnic, and this is an easy cookie you can feel good about giving to your children.

If you’re feeling more patriotic, go for some Red, White & Blue Mini Cheesecake Bites! These mini cheesecakes are super cute and great for portion control. Simply follow the recipe, opting to use miniature muffin tins lined with miniature paper liners instead of one large spring form pan. Top with your choice of fruit (great with strawberries, blueberries or raspberries) and bake until the center of each mini cheesecake is set and the tops are lightly browned.


This holiday menu is quick and easy and many recipes can be made in advance so you can spend more time with your family and friends, and less time in the kitchen!


Let’s not forget, with all the festivities, to take some time to pray for our military and remember those who’ve given their lives for the freedoms we enjoy!
